This is a favorite at my house. Both my youngest daughter and I love oranges but were discouraged when we couldn't find any orange pie recipes for Thanksgiving and Christmas. So I made up one of my own, to which many orange loving family members and friends love and ask me to make this for family/friends gatherings! It's a very easy, no bake pie to boot! Well, you do have to bake the Keebler pie crust for five minutes with an egg white, heh heh. Anyway, here is the recipe:
Orange Delight Pie
1 Keebler Grahame Cracker crust, baked with an egg white and cooled completely
1 tablespoon powdered sugar
3 ounces cream cheese, softened
Combine the powdered sugar and cream cheese. Spread on the bottom of the prepared and cooled Keebler Grahame cracker crust.
2 navel oranges, peeled and cut into bite sized pieces
Place orange pieces on the cream cheese mixture.
For topping glaze:
In a saucepan, cook the following until a thick glaze forms, on 6/7 heat (medium high:
1 cup sugar
2 tablespoons Light Karo Syrup
1 cup water
3 tablespoons of Orange Jello mix
pinch of salt
3 tablespoons of cornstarch
Cool glaze. Spread on top of orange filling, then chill in the refrigerator for at 4-6 hours before eating.
